What Do We Want From Cookbooks?

Cookbooks were once prescriptive: their primary function was simply to instruct. More recently, both cookbooks and food writing have grown more sophisticated and complicated, acknowledging that how we cook is at once deeply personal and inseparable from the broader contexts of culture and society. As the cookbook industry and food media move towards greater inclusivity of palates, cultures, and communities, people want and expect stories (and recipes) that offer both a point of view and ethical awareness—along with, of course, a healthy dose of pleasure. Eater staff writer Elazar Sontag moderates a conversation with cookbook authors Hetty McKinnon (To Asia, With Love), Vallery Lomas (Life Is What You Bake It), and food writer Kate Lebo (The Book of Difficult Fruit) to consider the choices and desires that inform their work.
